Rice-Less Fried Rice

1/2 small vidalia or sweet onion (chopped)

1/2 head of cauliflower

1 heaping Tbsp unrefined coconut oil

1 egg

1-2 cut-up vegetable (broccoli, zucchini, peppers, green beans, etc)

1-2 tsp Tamari

Himalayan sea salt and pepper to taste

 

Cut out core of cauliflower and break into stems.  Place 4-5 stems into Nutribullet/blender/food processor and pulse for a few seconds until rice-like.  Do not over blend.  Scoop into a bowl.  Repeat until finished.

Add coconut oil to frying pan on medium, heat and wait until melted.  Add onion and sautee for around 5 minutes until translucent.  Then, add egg and scramble in oil until cooked.  Then add veggies of choice and sautee for 2 minutes.  Then fold in cauliflower and mix completely.  Add tamari, salt and pepper.  Sautee until cooked or another 5 minutes or so.

This is a yummy carb-less side meal will satisfy that craving for rice every time.  Make it a main meal–just add cooked chicken or beef!  In the picture, I used zucchini as my veggie and it was delicious!
