Ingredients
- 4 boneless chicken breasts
- 1/2 cup almond flour (ground up almonds)
- 3 Tbsp ground flaxseed
- 1 egg
- 1 Tbsp extra virgin olive oil
- 1 Tbsp honey
- 1 tsp salt
- 1 tsp parsley
- 1 tsp thyme
Directions
Preheat oven to 350 degrees. Line a baking sheet with oil and set aside.
Pound chicken with a mallet by placing breasts in between 2 sheets of plastic wrap or parchment paper until they are about 1/2 inch thick.
Mix almond flour and flaxseed and set aside.
In a separate bowl, mix the remaining wet ingredients.
Marinade the chicken in wet mixture for 15 minutes (or not if time doesn’t allow). Transfer almond flour and flax mixture to a plate spreading evenly. Place chicken into mixture, then flip pressing coating into the chicken until evenly coated. Transfer completed chicken to baking sheet. Sprinkle remaining coating onto the top of chicken. Bake for 20 – 30 minutes.
Notes
This protein rich with omegas meal is a great substitute for breaded chicken that everyone loves. For kids, cut up the chicken into strips to make chicken fingers!
