Banana Oatmeal Breakfast Cookies

2 small bananas or 1 large banana (ripe is better)

1 cup rolled oats

1 tsp vanilla

1/4 cup regular dark or mini semi sweet chocolate chips (optional)

 

Preheat oven to 375 degrees.

Mix first 3 ingredients in bowl and then let sit for 10 minutes so oats can absorb the banana and soften.

Then add chocolate chips if desired.  I love the clean ingredients in Enjoy Life dark or semisweet chocolate chips.

Use 2 teaspoons to spoon out cookies onto a parchment lined cookie sheet pan.  The cookies will not spread and will keep their shape so you may want to flatten them a little with the back of a spoon.

Bake for around 25 minutes.  They should be cooked on the outside and soft on the inside.

You can keep them in an airtight container for a few days.  I like to freeze any leftovers right away as they thaw in minutes and tastes just as good as the first day.  However, they usually don’t last that long!
