Ingredients
- 1 Red Pepper
- 1 Green Zucchini Squash
- 1 Yellow Summer Squash
- Spray Olive Oil or Coconut Oil
- Salt and Pepper OR any other veggies you can think of–
- Onions
- Eggplant
- Mushrooms
- Asparagus
- Broccoli
- Tomato, etc…
Directions
Cut Pepper lengthwise into 1 inch wide strips.
Cut zucchini and summer squash lengthwise into 1/2 inch thick strips.
Line barbecue with foil in a pre heated grill at med hi and spray olive or coconut oil on foil. Lay veggies in single layer on foil and spray generously with oil. Season with salt and pepper. Cook for 3-4 minutes. Flip, spray and season other side and continue cooking for about 3-4 minutes longer.
