Paleo Granola

Ingredients:

1/2 cup Sunflower seeds

1/2 cup Pepitas (shelled pumpkin seeds)

1/2 cup Flax Seeds

1/4 cup Ground flax seeds

1 cup Walnuts (crushed)

1 cup Cashews (crushed)

3 Tbsp coconut oil

1/4 cup honey or pure maple syrup

1 Tbsp vanilla

1/2 tsp Clove

1/2 tsp Ginger

1/2 tsp Sea salt

Preheat oven to 275 degrees.  Line cookie sheet with parchment.  Mix nuts and seeds together.  Melt coconut oil on low heat or stir until smooth in a pan.  Take off heat.  Add honey or pure maple syrup, vanilla, clove, ginger, 1/4 tsp sea salt. Mix into nut and seed blend until all are well coated.  Then spread mixture in cookie sheet.  Sprinkle remaining 1/4 tsp sea salt. Bake in oven for an hour. Check and mix. Then may cook longer until desired crispness or until just turning brown –another 1/2 hour to hour. May store on counter or freeze.
