Banana Chocolate Chip Mini Muffins (Gluten and nut free)

Ingredients:

2 bananas (mashed)

4 eggs

1/4 cup honey (or xylitol)

1 Tbsp cinnamon

1/2 tsp sea salt

1 Tbsp vanilla

1/4 cup coconut milk (full fat from can)

1/2 tsp baking soda

1/2 cup arrowroot powder

1/2 cup ground flax

1/2 cup coconut powder

1/3 cup Enjoy Life mini chocolate chips

 

Preheat oven to 350 degrees. Line mini muffin pan with mini muffin paper muffin holders.  Add eggs to bananas and mix together.  Add each ingredient in the above order mixing well but no don’t use a mixer. Add mixture to muffin cups. Bake for 10-15 minutes. Check with toothpick coming out clean after inserting.  You can keep in an airtight container for a few days.  I like to freeze them to stay fresh.
