Quinoa Tabouleh

 

Ingredients

  • 2 cups quinoa, cooked and cooled
  • 1 ½ cups fresh tomatoes, chopped
  • 1 cucumber, diced
  • 8 scallions
  • 1 cup fresh parsley, minced
  • 2 lemons, juiced
  • 1 tsp. Himalayan pink salt
  • 3 tbsp. extra virgin olive oil

Directions

1. Put quinoa, tomatoes, cucumber,
scallions, and parsley in a bowl.
2. Dress with remaining ingredients, mix
well, and let sit for 15 minutes to allow
the flavors to meld.
3. Serve and enjoy!
