Roasted Butternut Squash with Turkey Sausage

 

Ingredients

  • 1 Small Butternut Squash (peeled, seeded, cut into 1 inch chunks)
  • 1 medium Apple (cut into 1 inch chunks)
  • 3 links of Applegate Farms Turkey Sausage (sliced into one inch chunks)
  • 3 sprigs fresh rosemary (or 3/4 tsp dried-fresh is MUCH better)
  • 1/4 cup coconut oil Sea salt and pepper to season

Directions

Preheat oven to 350 degrees.  Mix all together making sure to coat the squash and apple completely with oil. Bake at 350 degrees for 50 -60 minutes (depending on how well you prefer). Be sure to stir at leat twice during roasting time.

Notes

Another quick side and/or meal to make that has your veggies and protein all mixed together.  The squash and sweet apple makes for an irrestible combination.  The perfect grounding dish for a cold night.
