Ingredients
- 1 apple, diced
- 1 cup celery diced small
- Sea salt to taste
- 1 oz. raw walnuts chopped
- 4 Tbsp Avocado Mayo (recipe below)
- 9 oz turkey (about two medium breasts-cubed) Ingredients for Avocado Mayo:
- 1 avocado, pitted and skinned
- 1 tbsp. lime juice or apple cider vinegar
- 1/2 tsp. sea salt
- 1/4 cup extra virgin olive oil
Directions
Add all together and blend.
Avocado mayo Directions:
1. Put all but oil in a blender or food processor and pulse until combined.
2. While processor or blender is running, slowly drizzle in the oil in a thin, yarn-thick stream. Continue until all of the oil has been combined and the mayo is dense and creamy.
Note: Can be stored, covered, in the refrigerator for up to 2 weeks.
