Chocolate Cookies (vegan and gluten free)

Ingredients:

 

1/2 ripe plantain  (peeled)

7 pitted organic dates

7 Tbsp organic unrefined coconut oil

2 tsp vanilla

3/4 tsp salt

3 Tbsp organic coconut sugar

1/4 cup organic cacao powder

3/4 tsp baking soda

1 cup organic coconut flour

1/8 cup potato starch or all purpose gluten free flour

 

Directions:

 

Preheat oven to 350 degrees.  In food processor, combine plantain, dates, coconut oil and vanilla.  Slowly add remaining dry ingredients to food processor until dough-like.  Place in refrigerator for 10 minutes.  Then form 1/2 inch diameter balls by rolling dough between the palms of the hands.  Place balls on a cookie sheet lined with parchment paper. Flatten the balls halfway by pressing lightly on them with hand. Bake for 10 minutes.  Let cool for a couple of minutes before transferring to a wire rack or plate  Enjoy!
