Split Pea Soup

Ingredients

1 Tbsp coconut oil
3 stalks celery (sliced)
1 small or 1/2 large sweet or vidalia onion (peeled and diced)
1 sweet potato (cut into 1/2″ cubes)
14 oz or 16 oz package split peas
2 Tbsp Italian seasoning
8 cups Organic chicken broth or vegetable broth
1/4 – 1/2 tsp sea salt
1/4 tsp cayenne pepper
Freshly cracked black pepper

Directions

In large soup pot, add coconut oil until melted. Add celery and onion and sautee for about 5 minutes until onions are translucent. Then add sweet potato, split peas, Italian spice and broth. Turn heat to high and bring to a boil. Then cover and lower heat to low and simmer for about 45 minutes until peas are soft. Then add sea salt, cayenne and black pepper. Use immersion blender in pot to blend or transfer to a blender.
