Cauliflower Gnocchi

Ingredients:

1 Tbsp Avocado oil

1 bag cauliflower Gnocchi (Trader Joe’s)

1 jar Raos (or desired) tomato sauce (28 oz or less as desired)

Arugula-handful (Option-use other veggies such as steamed broccoli, green beans, brussels sprouts, etc)

Directions:

Heat sautee pan.  Then add avocado oil and spread until pan is well coated.  Then add cauliflower gnocchi. Spread gnocchi so they are somewhat coated with the oil.  Then cover with a lid for 2-3 minutes.  Take off lid and flip the gnocchis to cook and crisp other side.  Cover with lid again for 2-3 minutes. When gnocchi are crisp and cooked, add tomato sauce and arugula. Toss gently and sautee for another 5 minutes until sauce is heated.
