Aduki Bean Salad

Ingredients

  • 1 15 oz. can Aduki Beans (I used Eden Organic)
  • 1/2 cucumber (seeded and cut into small cubes)
  • 6 baby organic carrots (cut into small cubes)
  • 2 baby bok choy cut up (you can use spinach or any type of lettuce)
  • 1/4 cup pumpkin seeds 1 tbsp first cold pressed olive oil
  • juice from 1/2 fresh lemon or 1 tbsp lemon juice
  • 1 tsp of fresh or dried dill (I found a tube of organic dill by Gourmet Garden in refrigerated section of market-great!)
  • salt and pepper to taste

Directions

Add beans and vegetables.  Add remaining ingredients and toss.

Notes

I had heard about the healthy aspects of Aduki beans and just bought them for the first time in my health food store.  These cute little red beans are commonly used in Japanese cooking and boast high protein values (7-11 grams per serving!).  With these light seasonings, this is a great tasting and healthful salad.  It even looks beautiful-perfect as we leap into spring.  The best part is that you can substitute any veggies-peppers (red or yellow for color), celery, tomatoes, zuccini–whatever you have in the fridge!  And yes, it really does only take 10 minutes.  I timed it.  Enjoy! –
