Carb-less Protein Packed Cheesecake

 

 

Ingredients

  • 3 eggs
  • 2 packages (7.5 oz) of Friendship Farmer Cheese-(found near sour cream and yogurt in supermarket)
  • 1/2 cup greek yogurt
  • 1/3 cup of xylitol (sugar substitute found in health food stores) (you may also substitute honey but this will add carbs)
  • 1/4 tsp salt
  • 1/4 tsp baking soda

Directions

Preheat oven to 350 degrees.  Beat eggs first.  Then add Farmer’s Cheese and Greek yogurt until fully blended and creamy.  Then add remaining ingredients.  Pour mixture into glass pie dish and bake for 30 minutes until slightly browned on top.  Feel free to top with strawberries or blueberries.

Notes

Enjoy this carb-less treat.  The bonus is that it is also high in protein with 9 grams in every serving.  Not bad for a piece of cheesecake!  Enjoy.
