Fish Tacos

Ingredients:

1/4 cup First cold pressed olive 🫒oil

1 1/2 tsp chili 🌶 powder

1 1/2 tsp oregano

1/2 tsp cumin

1 tsp cilantro

1 pound flaky white fish (I love wild cod 🐟)

4 soft or hard tortillas (I prefer grain-free siete brand)

2 cups chopped lettuce of choice

Fresh tomato salsa

Buffalo 🦬 sauce (optional but soooo good-I love the dairy-free primal kitchen brand)

Directions:

For the marinade, pour olive 🫒oil into small bowl and add chili powder, oregano, cumin and cilantro.  Mix well.

Place fish 🐟 in a dish and pour marinade over it, making sure to coat the fish well on both sides.  Allow to marinate for 20 minutes.

Prepare tortillas by placing them on a cookie sheet and preheat oven to 375 degrees.  Different tortillas may have to be baked differently, so check instructions.  For the grain-free tortillas by Siete, I baked them for about 5 minutes putting them in the oven right before cooking the fish.  Do not bake these for longer as they will harden if overcooked.

Heat large sautéed pan and thinly spray with coconut🥥oil, avocado 🥑 oil, or olive oil.  Not much is required.

Season the marinaded fish with a sprinkle of sea salt and cook fish in pan undisturbed for 4 minutes.  Then, cook the other side for another 2 minutes.  Remove the pan from heat and flake the fish into the pan using a spatula or fork making sure to mix in all the marinade that has stuck to the bottom of the pan.

To assemble tacos, simply add fish, fresh salsa or buffalo sauce-whatever makes you happy:).  Enjoy!
