Ingredients
- 1/2 cup raisins
- 1 1/4 cup pecans or walnuts ( I like walnuts!)
- 1 cup unsweetened shredded coconut
- 1 teaspoon vanilla
- 1 Tablespoon soft butter
- 2 Tablespoons honey
Directions
Preheat oven to 300 degrees.
Place all ingredients in a food processor or blender and blend until fairly smooth, but still with a little texture. Form dough into balls, place on a buttered cookie sheet and gently flatten
Bake at 300 degrees for 10 minutes or until done.

Great question. Granola has many versions, one of which is of nuts and seeds, which is what these cookies contain. This is a much lower carb and healthier version of typical granola:). Enjoy! I’m about to make a batch now…
