Salad:
π₯ 1/2 head cabbage (chopped)
π₯ 1/2 English cucumber (chopped)
π₯ 1 cup chives (chopped)
π₯ 1/4 cup leeks (chopped)
π₯ 1 can garbanzo beans (optional)
Dressing:
π 2 cups packed basil
π 1/2 cup packed parsley
π 1/4 cup walnuts
π 1/4 cup nutritional yeast
π 1/4 cup olive oil
π 2 Tbsp lemon juice
π 1/4 tsp Himalayan sea salt
π 1/4 cup water (add more as needed)
πΒ 2 cloves garlic
π 1 small shallot or scallions, chopped
Put above salad ingredients in bowl. Set aside.Β Blend dressing ingredients in Nutribullet or blender until smooth.Β Fold dressing into salad.Β Can last in fridge for up to 5 days (but it will disappear long before then!)
