Green Goddess Salad

Salad:

πŸ₯— 1/2 head cabbage (chopped)

πŸ₯— 1/2 English cucumber (chopped)

πŸ₯— 1 cup chives (chopped)

πŸ₯— 1/4 cup leeks (chopped)

πŸ₯— 1 can garbanzo beans (optional)

Dressing:

πŸ’š 2 cups packed basil

πŸ’š 1/2 cup packed parsley

πŸ’š 1/4 cup walnuts

πŸ’š 1/4 cup nutritional yeast

πŸ’š 1/4 cup olive oil

πŸ’š 2 Tbsp lemon juice

πŸ’š 1/4 tsp Himalayan sea salt

πŸ’š 1/4 cup water (add more as needed)

πŸ’šΒ  2 cloves garlic

πŸ’š 1 small shallot or scallions, chopped

Put above salad ingredients in bowl. Set aside.Β  Blend dressing ingredients in Nutribullet or blender until smooth.Β  Fold dressing into salad.Β  Can last in fridge for up to 5 days (but it will disappear long before then!)
