Ingredients
- 2 egg whites
- 3/4 cup xylitol (safe sugar substitute found in health food stores)
- 1 tsp peppermint flavoring
- 1/4 tsp salt
- 1/4 tsp cream of tartar
Directions
Preheat oven to 350 F. Line 2 cookie sheets with foil. With electric mixer, beat egg whites until peaks begin to form. Add xylitol slowly (1 tbsp at a time). Add peppermint, salt and cream of tartar until mixture is very stiff and shiny. Do NOT OVERBLEND or mixture may collapse. Drop by teaspoons onto prepared cookie sheets and place in preheated oven. Turn oven OFF and forget about cookies until next morning. Great for night before preparation.
Notes
This quick and easy guilt-free sweet is a favorite of my family’s. Sometimes we add crushed dark chocolate or pecans for a little added crunch.
