Ingredients:
2 sweet potatoes (peeled and chopped into 1″ cubes)
1 cup cooked quinoa (cook 1/2 dry quinoa in 1 cup of broth or water)
1/2 red onion or 1/4 vidalia onion (finely chopped)
1 Tbsp finely chopped fresh Thyme or 1 1/2 tsp bottled thyme
3 cloves crushed garlic
1/2 tsp cayenne pepper or chili powder
Avocado oil for frying in pan
Directions:
Heat a large skillet over medium heat and add 1/2 tablespoon avocado oil. Add in sweet potato, onion, salt and pepper to taste, stir, cover and cook for 15-20 minutes, or until potato is soft (easily able to be mashed). Remove lid and add garlic and cayenne/chili pepper, cooking for an additional minute.
Transfer cooked sweet potatoes to a large bowl and mash. Add in quinoa, thyme, and additional salt and pepper to taste. Mix well. Using your hands to bring it together, form equally-sized patties. Heat the same skillet over medium heat and add avocado oil. Add cakes and cook for 3-4 minutes per side, or until golden brown.
Top with fresh salsa if desired.
