Super Simple Sauteed Bok Choy

Heaping Tbsp unrefined coconut oil

1/4 cup raw pumpkin seeds/pepitas

1/4 tsp. Himalayan sea salt

1 Head baby bok choy, chopped

1/4 tsp Himalayan sea salt, pepper to taste

1/2 tsp Coriander (or preferred spice)

Heat coconut oil in pan.  When melted add pumpkin seeds on med heat.  Sprinkle sea salt and sautee for about 30-60 seconds until seeds start to brown and start to “pop.”  Remove from pan and set aside.  Add baby bok choy, additional sea salt, pepper and coriander.  You may have to add another Tbsp of coconut oil if it all came out when removing seeds prior.  Sautee bok choy for 2-3 minutes.  Add seeds on top.

Enjoy this super simple side with a crunch that everyone will enjoy. Add sauteed chicken or coked ground beef or turkey–and you’ve got yourself a whole stir fry meal!
