Ingredients

1 Tbsp olive oil

1/2 med sweet onion chopped

1 lb. lean ground turkey

1 tbsp minced garlic

2 1/2 tsp ground cumin

1/2 tsp salt

1/2 tsp pepper

1/2-3/4 can chicken broth (8 oz)

1 can (15 oz) black beans, rinsed

1/2 cup green salsa (salsa verde)

1/2 cup chopped cilantro
Directions
Heat oil in a deep soup pan. Sautee onions for 5-10 minutes until soft (season with salt and pepper). Add turkey and garlic and cook, stirring to break up meat until fully cooked. Add cumin, salt and pepper and cook, stirring for 30 seconds.
Stir in broth, beans and salsa bringing to boil. Adjust amount of broth with how soupy you prefer it to be. Cover and simmer for 10 minutes.
Remove from heat. Stir in cilantro. Serve with brown rice and top with sour cream.
