Zucchini (Zoodles) with Pesto

2 Zucchinis (sprialized) or package of pre-spiralized “zoodles”

Pesto:

1/2 cup whole cashews
1 cup packed kale leaves
1 cup packed basil leaves
1 cup packed arugula
1/4 cup fresh parsley leaves
juice of 2 lemons
1/2 tsp lemon zest
1-2 cloves garlic
Extra Virgin Olive Oil (EVOO)
salt and pepper

Pesto: In food processor or blender, pulse cashews until finely chopped.
Add combo of greens, zest, juice and garlic.
Pulse, scraping down sides of the bowl until everything is chopped to preference
While food processor is on, slowly add the EVOO through the feed hole until the pesto reaches your desired consistency.
Stop and scrape bowl.
Add salt and pepper

Combine pesto with zoodles. Add tomatoes for garnish.
