The Real Skinny on Paula Deen

When Paula Deen revealed recently that she has been living with Type 2 diabetes for the past 3 years, most people were not exactly shocked.  Mrs. Deen certainly isn’t the role model for healthy cooking.  However, she is a great role model in what NOT to eat.  It may not be what you think, though, that caused her Type 2 Diabetes.  While she’s famous for her pound of butter in everything, it’s another main ingredient in so many of her recipes that is the cause of her Type 2 Diabetes.

Let me explain first what Diabetes is.  Type 1 Diabetes is when the pancreas no longer is able to make insulin.  Type 2 Diabetes is when the cells of the body resist insulin’s action due to excessive intake of carbohydrates. The pancreas does make extra insulin, but cannot keep up.

As Johnny Bowden, the Rogue Nutritionist points out so eloquently regarding Type 2,

“You eat a ton of carbs, your blood sugar goes through the roof. The pancreas starts working overtime to pump out enough insulinto remove all that excess sugar. But our bodies weren’t designed to cope with the amount of carbohydrates/sugar we ordinarily consume, so eventually the system breaks. The pancreas is valiantly trying to pump out enough insulin, but it’s like a Volkswagen (Beatle) trying to go 110 miles an hour. At some point blood sugar is either too high for insulin to effectively remove it, or the cells just stop letting sugar and insulin in. You wind up with both high blood sugar and high insulin.”—Type 2 Diabetes.

Therefore, the real culprit with Paula Deen is not fat as fat has virtually no effect on insulin with little or no effect on blood sugar.  It’s the sugar along with the rice, bread, pasta, potatoes, cereal, etc that turns into sugar!  In fact, fats (no, not the hydrogenated and trans fats) along with protein and veggies will reverse Type 2 Diabetes.  And yes, folks, without the need for the very drugs (with all the nasty side effects) that Paula Deen is now pitching.
