My Fave Soup Recipe, Sprouting and More

I wanted to share a bit of what I’ve been up to doing lately to nourish my body and mind.

 

First, it’s been cold here in December in the Northeast!

 

For me, there’s nothing better than a hot bowl of soup to warm up the body:).

 

Last night I whipped up my fave soup, Butternut Squash.  It was so quick and easy and sooooo good.  You can check out the recipe here.  In the pic below, I roasted some sunflower seeds to add a little crunch.

 

 

I’ve also been getting inspired to do some sprouting!  I have grown broccoli sprouts in the past, but was inspired by my daughter, Jen, to grow more of a variety.

 

And I have to say I’ve been enjoying them so much more–or maybe I just ordered seeds that I like more or maybe I bought better quality seeds.  

 

I ordered this variety of mung bean, lentil, radish and sunflower seed from Perfect Foods and I find that they taste good to me and are even more filling than you would think!  I was surprised when Jen told me that sunflower sprouts are the most nutrient-dense, and I stocked up.

 

So, I’ve been enjoying some with my salad for lunch and sprinkle with whatever I eat for dinner.  You can blend them in a smoothie or add dressing or mix them with whatever you are having.

 

One thing I have noticed, and yes, I’m going to do some poopy talk, is that my bowel movements have been super productive.  Things are really moving and groovin’!

 

When you think about it, eating veggies that are freshly grown and only a few days old, as opposed to supermarket veggies that could be weeks to months old, have to be so much better for the body.

 

And, it’s easy!

 

I just water them twice a day, and voila!  After just a few days, you get these uber nutrient-based sprouts that are so good for you.

 

I will write another more in-depth article on the benefits of sprouts, but I wanted to give a quick update.

 

 

Jennifer even inspired me to grow wheatgrass.

 

Did you know that 1 ounce of wheatgrass juice has the same amount of nutrients as 5 pounds of veggies?? Yes, really!

 

So, I bought a wheatgrass kit from Perfect Foods, also. I also got a great Black Friday deal for a special Jocuu masticating juicer, that I absolutely love. I already had a Breville juicer for when I juice celery, but you need a masticating juicer for wheatgrass, to keep its integrity.

 

I have to say that I like this juicer even better than my Breville juicer as it’s less space and much quicker to clean.

 

However, while sprouting is ridiculously quick and easy, growing the wheatgrass certainly takes more time. Plus, it takes so much wheatgrass to juice just one ounce. So, I’m not so sure I’ll be continuing with growing my own wheatgrass.

 

If anything, I think I will buy already grown wheatgrass, again, from Perfect Foods, or they even sell wheatgrass juice that is frozen.

 

But it does look so nice and smells so good on my windowsill in my little New York City apartment:).

 

Finally, with nourishing my mind, I ran my first live group hypnosis to curb food cravings and take control over the food we eat – and it was great:).  The feedback was so positive and I was so happy to empower those who attended. I listened to the recording for myself and I can tell it’s working!

 

Anything to make it easier to actually desire making good food choices, especially over the holidays, is always up my alley.

For me, it’s so easy to eat when I’m not really hungry and have snacks, as I work from home.  But I’m realizing over the past few day that I haven’t really thought about snacking. It didn’t even occur to me until just now.
