My Fave Summer Recipes

I love to eat!  and there are plenty of healthy options out there that are easy to make and keep you satisfied and full of energy.

 

Below are a few of my staples that our constant flow of weekend guests love just as much as I do:).

I love this super simple quinoa salad that I make with ingredients from Costco.

Ingredients:

3 cups Ancient Harvest Organic Quinoa (pre-cooked)

2 cups Nature Source Organic Salad Topper (Blend of sunflower seeds, pumpkin seeds, dried cranberries)

1 1/2 cups Sunbelt Organic Fresh Salsa

1 avocado (insides cut up in little squares)-optional

Add pre-cooked quinoa, salad topper and salsa and gently mix.  Oftentimes I will also add a cut-up avocado.  Sweet and tasty but best of all—EASY.

 

I thought I would add this in as it is so darn easy and tastes yummy.  Both ingredients can be found at Trader Joe’s.  While the Jicama Slaw does come with its own dressing, that dressing contains canola oil, which is not Jill the Health Coach approved (Canola oil is highly refined with bleach and very inflammatory).

My fave dressing from Trader Joe’s, made with extra virgin olive oil, is Green Goddess–soooo good!  So I just mix up the slaw with the Green Goddess for a perfect side.

This Vegan Pesto Dip has become the weekend staple. It’s a perfect dip and dressing and everyone loves it!

Ingredients:

1 avocado

2 cups packed basil

1/2 cup raw walnuts

2 tbsp lemon juice

1/4 cup vegan parmesan cheese (nutritional yeast)

1 Tbsp hemp hearts (optional)

1/4 cup olive oil

1/2 tsp sea salt

1/4 -1/2 cup water as needed

Add all ingredients to the NutriBullet or Blender. Blend until creamy. Couple this with carrots, celery and cucumber and you’ve got a yum and healthy appetizer.

This is my absolute fave salad!  While I love Trader Joe’s Green Goddess dressing, this is my heavenly homemade Green Goddess Salad.

Salad Ingredients:

1/2 head cabbage (chopped)

1/2 English cucumber (chopped)

1 cup chives (chopped)

1/4 cup leeks (chopped)

1 can garbanzo beans (optional)

Dressing:

2 cups packed basil

1/2 cup packed parsley

1/4 cup walnuts

1/4 cup nutritional yeast

1/4 cup olive oil

2 Tbsp lemon juice

1/4 tsp Himalayan sea salt

1/4 cup water (add more as needed)

2 cloves garlic

1 small shallot or scallions, chopped

 

Put above salad ingredients in bowl. Set aside.  Blend dressing ingredients in Nutribullet or blender until smooth.  Fold dressing into salad.  This can last in fridge for up to 5 days (but it will disappear long before then!)

Got dessert?  Move over ice cream.  Yes, another Costco find (did I mention that I love Costco?) that’s a much healthier option and still quenches that cool, sweet summer craving.

Simply empty some of the frozen organic super smoothie into your NutriBullet or blender with a little water or even coconut or almond milk, until fully blended.  Sometimes I’ll add an extra frozen banana to make it even more creamy.  And sometimes, I’ll sneak in a little rum to make a daiquiri!
